Cleanup main after cutting new 1.8.latest branch #1022

This PR will fail CI until the dbt-core PR has been merged due to release version conflicts. The workflow that generated this PR also created a new branch: 1.8.latest

This is kind of confusing. Although we released 1.8.0b4 out in the wild, 1.8.0b3 is all that's accounted for on. This was due to out of order operations. That said, this Pr gets us back into expected state.
